Bacon wrapped jalepeno poppers

My husband makes these all the times and pops them for breakfast! Great yummy appetisers for entertaining too.

Ingredients

900 g boiled and mashed sweet potato

10 jalepenos (large)

1 roast chicken

20 strips of streaky bacon

Method

Slice each jalepeno in half lengthwise, scrape out the seed and stuff with sweet potato. Place a piece of roast chicken on top and then wrap the whole thing in a strip of streaky bacon. Bake in the oven 180 deg Celsius 10 minutes on each side until bacon has browned.

Eat hot or cold!
